Evaluation of Dietary Education Program Based on the Normalization Process Theory Using a Formative Research: Perspectives of Marriage Immigrant Women Program Providers and Recipients

Abstract
This study examined the gap between the real and ideal dietary education program based on the Normalization Process Theory to improve existing programs and help develop programs using formative research. From October to November 2018, focus-group interviews were conducted on 10 female marriage immigrants from China, Vietnam and Japan for receiving feedback. In addition satisfaction surveys were conducted after the three programs (Program A-home visiting cooking education program, Program B-cooking class in native language & home delivery of healthy food package, Program C-Seoul traditional market trip). In thematic analyses of focus-group interviews, the gap between the reality and ideal dietary education programs was revealed from the information of the educational objective (coherence), promoting education programs and translating textbook, an organized system of ingredient procurement (cognitive participants), in-advance provision of training for nutrition knowledge and skills for the educator, and mingling with participants from different homelands (collective action). The scores of the satisfaction surveys were significantly higher in Programs A and B, which were conducted in their native language, than Program C in 11 out of 13 questions in all four themes of Normalization Process Theory. This study will be helpful when designing culturally tailored and acceptable nutrition education programs for marriage immigrant women.
